Sometimes all you need is a big bowl o’ beige! This caramelised fennel and sausage pasta delivers both on taste and comfort. 

Fennel is woefully underrated. It normally has a mild anise or liquorice flavour but when you cook it like this, it loses those notes and becomes quite sweet. All this to say that if you don’t ordinarily like fennel, there’s still a strong chance you’ll love this dish.

This stunning veggie centrepiece is perfect for entertaining. It looks impressive but it’s so incredibly easy to make. You simply brush the cauliflower with turmeric oil then roast it until charred and tender. This gives you time to make the sweet and sour cumin glaze and the pomegranate mint salad, which both complement the cauliflower (and each other!) so well.

This is a recipe that I go back to time and tome again. Tomatoes and peppers are a match made in heaven, and roasting them brings the best out of them. I love a super basil-forward soup, but I also want it to retain its vibrant orange hue, so I make a basil-infused stock instead, which gives you all of the basil flavour without turning the soup brown.

MASOOR DAL TADKA! @zenaskitchen 

This wonderfully creamy dal is delicious, full of flavour and incredibly easy to make! For anyone unfamiliar with asafoetida (hing in Hindi), it’s, in the words of @priyakrishna, what “makes Indian food taste more Indian”. Flavour wise, it’s funky, oniony and garlicky. But more importantly, it’s a flavour enhancer, making every other spice come through. You can find asafoetida in most large UK supermarkets.

Though onions are the backbone of so many dishes, they can actually make a brilliant centrepiece. Adapted from @ottolenghi and @ixta.belfrage’s miso butter onions, this recipe transforms the humble onion into something incredibly delicious with just three ingredients: gochujang, butter and water. The garnishes aren’t a requirement, though they do add colour and freshness. Serve as is, over rice or with some crusty bread.

This might just be the ultimate autumn comfort food. Pumpkin purée gets cooked down in brown butter, before being combined with mascarpone, parmesan and warm spices to make the most delicious pasta sauce. Add some crispy herby breadcrumbs and you’ve got yourself a pretty wonderful (and very indulgent!) pasta dish.

When @thermomixukandireland challenged me to make a recipe using ingredients that are often discarded, my mind immediately went to falafel. 

They’re great for using up any herbs lurking at the back of your fridge. The same goes for the green tahini sauce - throw in any herbs and/or greens that need using up and you’re good to go.

Turmeric and coconut are a match made in heaven and they complement the butternut squash so beautifully.
