Delicious, smokey, cheesy chickeny goodness! These quesadillas are insanely good. The filling is incredibly versatile. You could use the chipotle bbq chicken filling in a burrito, on nachos, over rice, loaded onto chips, in a sandwich or even on its own!

Ingredients
- 1 onion, thinly sliced
- 2 garlic cloves, thinly sliced
- extra-virgin olive oil
- 2 tbsps barbecue sauce (I use honey barbecue)
- ½ tbsp chipotle chilli paste
- ½ tsp garlic granules
- ½ tsp onion granules
- ½ tsp ground cumin
- ¼ tsp fine sea salt
- 500 g chicken thigh fillets (boneless, skinless chicken thighs)
- 10 g fresh coriander
- 6 medium flour tortillas
- 250 g mature cheddar cheese, grated
Instructions
- Heat your oven to 200℃ / fan 180℃. Place the onion and garlic in a large roasting tin. Season with salt and pepper, drizzle with extra-virgin olive oil and toss to coat. Roast for 15 minutes.
- Meanwhile, combine the barbecue sauce, chipotle chilli paste, garlic granules, onion granules, ground cumin and salt in a medium mixing bowl. Add the chicken thigh fillets and toss well to coat.
- Take the onion/garlic out of the oven. Arrange the seasoned chicken fillets in a single layer on top of the onion/garlic base. Roast for 30 minutes, or until the chicken is cooked through.
- Transfer the chicken to a large plate or chopping board and leave to rest for 5 to 10 minutes. Shred or slice the chicken then return it to the roasting tin with the onion and garlic. Mix well to combine.
- Place a small handful of grated cheddar on half of a flour tortilla. Add a good dollop of the chipotle chicken mix and top with another small handful of mature cheese. Fold the tortilla half over the filling, pressing to smoosh it down, then brush with oil. Repeat with the remaining tortillas
- Heat a large, non-stick frying pan over medium heat. Cook the quesadillas until brown and the cheese melts, 2 to 3 minutes per side. Serve with your favourite salsas and enjoy!
