Christmas Crumble

Apple crumble, with a Christmas twist! I’ve taken a classic apple crumble and spiced it up with classic Christmas flavours – orange, cinnamon, clove and other warm spices. If you’re wondering what gives it that beautiful, deep red hue it’s cranberry sauce! We always have leftovers that we don’t know what to do with, so I thought to myself, why not incorporate it into a delicious comforting dessert? Best served with custard, because custard is undoubtedly the best crumble topping!

  • 500 g bramley apples
  • 150 g cranberry sauce
  • ½ small orange, juice and zest
  • 4 tbsps golden caster sugar
  • ½ tsp ground cinnamon
  •  tsp ground clove
  • 1 pinch ground nutmeg
  • 200 g plain flour
  • 150 g golden caster sugar
  • 150 g very cold butter, grated
  • 1 pinch fine sea salt
  • fresh vanilla custard, for serving

  1. Heat your oven to 190℃ / fan 170℃. Peel and core the apples and slice them into ½ cm-ish slices. Place them in a large bowl and add the cranberry sauce, orange juice and zest, caster sugar, ground cinnamon, ground clove and ground nutmeg. Toss well to coat and set aside.
  2. Place the flour, sugar, grated butter and salt in a separate large bowl. Using a whisk, incorporate all the ingredients until the butter strands are coated in flour and sugar then get in there with your hands and rub the butter into the flour and sugar until the mixture resembles moist breadcrumbs.
  3. Transfer the apple mixture to a deep 20 cm baking dish. Sprinkle the crumble mixture over the top, spreading it out into an even layer. Bake for 35 to 40 mins, or until golden and bubbling. Serve with vanilla custard and enjoy!
