Guacamole isn’t just a modern-day favourite. It has roots dating back thousands of years. The dish originated with the Aztecs in Mexico, who mashed avocados with salt, tomatoes, and chillies to create an early version of what we know today. Avocados were highly valued in Mesoamerican culture, prized for their rich nutrients and creamy texture. The name itself comes from the Nahuatl word ahuacamolli, meaning “avocado sauce.”

Spanish colonists adopted the dish, introducing new ingredients like onions and citrus. Over time, Guacamole evolved into a staple of Mexican cuisine, celebrated for its simplicity and adaptability. Today, it’s enjoyed worldwide, with countless regional variations. Some versions include extra spices, while others add ingredients like pomegranate seeds or roasted corn.

Despite its many variations, the essence of Guacamole remains unchanged: a fresh, creamy avocado-based dip that highlights the beauty of simple, high-quality ingredients. Knowing its rich history only adds to the appreciation of every bite.

Selecting the Perfect Avocado

Great Guacamole starts with perfectly ripe avocados. The best ones yield slightly when pressed but remain firm enough to hold their shape. Overripe avocados can become mushy and overly oily, while underripe ones won’t mash properly and lack the desired creaminess.

To test ripeness, gently squeeze the avocado in your palm. Avoid using fingertips, as this can bruise the flesh. If it feels slightly soft but not squishy, it’s ready. Another trick is to check the stem end: if it pops off easily to reveal green flesh underneath, the avocado is good to go. If it’s brown underneath, it may be overripe.

Getting the Right Consistency

Texture is key in a great Guacamole. Some prefer it ultra-smooth, while others enjoy a chunkier version. For a balanced consistency, mash the avocados with a fork, pressing down until mostly smooth but leaving small chunks intact. This ensures a creamy yet slightly textured dip that holds up well with chips and toppings.

The beauty of Guacamole lies in its simplicity, but each ingredient plays an essential role in creating a balanced flavour profile.

Lime juice provides acidity, which brightens the dish while preventing the avocados from oxidising too quickly. It’s best to start with a small amount and add more to taste. Jalapeño adds subtle heat, but you can adjust the spice level by leaving in or removing the seeds. Red onion contributes mild sharpness and crunch, contrasting beautifully with the creamy base.

Fresh coriander is a divisive ingredient. Some love its citrusy, slightly peppery notes, while others find it overpowering. If you’re unsure, add a small amount first, tasting as you go. Salt and black pepper bring everything together, ensuring the flavours pop without overpowering the delicate avocado.

How to Keep Guacamole Fresh & Vibrant

One common challenge with Guacamole is its tendency to brown quickly. While lime juice helps slow oxidation, additional tricks can extend its freshness. Storing guacamole in an airtight container with a thin layer of lime juice or water on top creates a barrier that prevents air exposure. When ready to serve, simply pour off the liquid and give it a quick stir.

Alternatively, pressing a piece of cling film directly onto the surface of the guacamole minimises air contact, keeping it bright green for longer. Always store it in the fridge and consume within a day for the best flavour and texture.

Ingredients

Scale
  • 2 large avocados, very ripe but not bruised
  • 1 ripe tomato, seeds and pulp removed, chopped
  • ½ red onion, finely chopped
  • 1 jalapeño, deseeded and finely chopped
  • 1 lime, juice only (or more to taste)
  • 2 tbsps fresh coriander, finely chopped

Instructions

  1. Half and stone the avocados and use a spoon to scoop the flesh out into a bowl. Mash the avocados with a fork until the desired consistency is reached.
  2. Add the remaining ingredients and stir to combine. Season with sea salt and freshly-ground black pepper, to taste, and serve.
