Ingredients
- 6 salmon fillets
- extra-virgin olive oil
- sea salt and freshly-ground black pepper
- 10 g fresh flat-leaf parsley, finely chopped
- 4 sprigs fresh rosemary, leaves only, finely chopped
- 1 green chilli, finely chopped
- 1 large garlic clove, minced or grated
- 2 tsps honey
- 1 lime, zest and juice
- 2 tbsps extra-virgin olive oil
Instructions
- Heat oven to 220℃/fan 200℃. Line a baking tray with foil. Rub the salmon fillets with a drizzle of olive oil and season lightly with sea salt and freshly-ground black pepper.
- Arrange the salmon in a single layer on the foil-lined baking tray and roast for 8 to 12 minutes, depending on the thickness of your fillets, or until just opaque and easily flaked with a fork.
- Meanwhile, combine the herby zingy sauce ingredients in a small bowl. Season with sea salt and some freshly-ground black pepper, to taste.
- Slather the salmon fillets with the herby zingy sauce and serve with extra sauce on the side.
