Herby Zingy Salmon

Perfectly roasted salmon slathered with a delicious, zingy sauce, packed with fresh herbs, lime, chilli and garlic. A quick and easy dish that takes just 15 minutes from start to finish.

Ingredients

Scale
  • 6 salmon fillets
  • extra-virgin olive oil
  • sea salt and freshly-ground black pepper
For the herby zingy sauce:
  • 10 g fresh flat-leaf parsley, finely chopped
  • 4 sprigs fresh rosemary, leaves only, finely chopped
  • 1 green chilli, finely chopped
  • 1 large garlic clove, minced or grated
  • 2 tsps honey
  • 1 lime, zest and juice
  • 2 tbsps extra-virgin olive oil

Instructions

  1. Heat oven to 220℃/fan 200℃. Line a baking tray with foil. Rub the salmon fillets with a drizzle of olive oil and season lightly with sea salt and freshly-ground black pepper.
  2. Arrange the salmon in a single layer on the foil-lined baking tray and roast for 8 to 12 minutes, depending on the thickness of your fillets, or until just opaque and easily flaked with a fork.
  3. Meanwhile, combine the herby zingy sauce ingredients in a small bowl. Season with sea salt and some freshly-ground black pepper, to taste.
  4. Slather the salmon fillets with the herby zingy sauce and serve with extra sauce on the side.
