Liven up your dinner table with this light, summery side salad, which pairs beautifully with grilled meat or fish. It’s healthy, full of flavour and takes less than 10 minutes to throw together!

Ingredients

For the avocado-herb dressing:
  • 2 avocados
  • 2 tbsps freshly-squeezed lime juice
  • 2 spring onions, thinly sliced
  • 5 g fresh flat-leaf parsley, chopped
  • 5 g fresh coriander, chopped
  • 5 g fresh mint leaves, finely chopped
  • sea salt and freshly-ground black pepper
For the salad:
  • 450 g peas, cooked and cooled
  • 350 g edamame, cooked and cooled
  • 30 g dried cranberries, roughly chopped, optional
  • sea salt and freshly-ground black pepper
  • extra lime juice, optional

Instructions

  1. Make the dressing: scoop avocado flesh into a bowl and mash with a fork. Add the lime juice, spring onions and fresh herbs and stir to combine. Season with sea salt and some freshly-ground black pepper, to taste.
  2. Combine the peas, edamame and dried cranberries (if using) in a large bowl. Season lightly with sea salt and freshly-ground black pepper. Add the avocado herb dressing and stir until well combined. Taste and adjust seasoning, if necessary. Serve immediately with an extra squeeze of lime juice (optional).
