Hong-Kong Style French Toast

If you love French toast, you will love this Hong Kong version. Loaded with peanut butter (or your favourite spread!), fried to golden crispy perfection and finished with a drizzle of condensed milk, it makes for the most epic brunch dish.

Ingredients

Scale
  • 6 thick slices of white bread
  • 4 tbsp peanut butter (or your favourite spread)
  • 2 large eggs
  • 50ml whole milk
  • vegetable oil, for shallow frying

To serve: 

  • 2 tbsp salted butter
  • 2 tbsp condensed milk

Instructions

  1. Spread one slice of bread with peanut butter. Top with another slice of bread and spread it with peanut butter, too. Top with one more slice of bread to make a three-tiered sandwich. Repeat with the remaining bread and peanut butter, then cut the crusts off the french toasts.
  2. Whisk the eggs and milk in a wide, shallow bowl. Working one at a time, dip the french toasts in the egg mixture so they’re coated on all sides but not completely saturated.
  3. Heat a generous glug of vegetable oil in a large frying pan set over a medium heat.
  4. Cook the french toasts until golden brown on both sides, around 1 minute, then sear all the edges until golden brown, too, 15-30 seconds per side.
  5. Drain on a wire rack or kitchen towel, then top with the butter and condensed milk and serve – enjoy!
