Miso Salmon

This is easily one of my favourite fish dishes. It’s delicious, so easy to make and only requires a handful of ingredients. All you need to do is make the 3-ingredient glaze, marinate the salmon for a few hours, then roast it to charred perfection. Served with steamed sushi rice and greens, it’s the perfect weeknight meal.

Ingredients

Scale
  • 2 tbsp white miso paste
  • 2 tbsp mirin
  • 2 tbsp granulated sugar
  • 500g salmon half side
  • optional toppings: sesame seeds and spring onions

Instructions

  1. Whisk the white miso paste, mirin and sugar until smooth and well-incorporated. Place the salmon in a wide, shallow bowl. Add the marinade and turn to coat.
  2. Place the salmon flesh-side-down in the bowl. Cover and refrigerate for at least 3 hours, or preferably overnight. This step is crucial! Please don’t be tempted to marinate the fish for any less than 3 hours. The longer it sits in the marinade, the better it will be.
  3. Heat your oven to 230°C/ fan 210°C. Line a small baking tray with greaseproof paper (the sugar content is going to make things very sticky!).
  4. Place the salmon on the lined tray and top with any excess marinade left in the bowl. Roast for 12 to 15 minutes, or until just opaque and easily flaked with a fork. Serve with steamed rice and vegetables and enjoy!
