Perfectly roasted salmon marinated in, and topped with, a delicious, tangy coriander-based salsa verde. A quick and easy dish that takes just 20 minutes from start to finish.

4 salmon fillets

For the coriander salsa verde:

2 garlic cloves, roughly chopped
2 vine tomatoes, roughly chopped
1 large handful of fresh coriander, roughly chopped
1 tsp sherry vinegar
1 tsp white sugar
olive oil

Instructions

Heat your oven to 230℃. Line a baking tray with foil.
Lightly season the salmon fillets with sea salt and freshly-ground black pepper.
Add the garlic to a mortar and grind into a paste.
Add the tomatoes and coriander and grind until they break down.
Add the sherry vinegar, sugar and a drizzle of olive oil and stir well to combine. Season with sea salt and freshly ground black pepper, to taste.
Add half of the salsa verde to the salmon and toss to coat.
Arrange the salmon in a single layer on the foil-lined baking tray and roast for 8 to 12 minutes, depending on the thickness of your fillets, or until just opaque and easily flaked with a fork.
Top the salmon with the remaining salsa verde and serve – enjoy!
