Burrata and Tomato Salad with Harissa Dressing

I always say that burrata is overrated. This salad, however, isn’t. All thanks to a very delicious spicy harissa dressing. While it might look like I have a slight harissa obsession, the reality is that I like to use what I have on hand, and I always have lots and lots of harissa.

Ingredients

Scale
  • 1 tbsp rose harissa paste
  • 2 tbsp balsamic vinegar
  • 3 tbsp extra-virgin olive oil
  • 1/2 tbsp honey
  • 1 garlic clove, crushed
  • 4 large beefsteak tomatoes
  • Handful fresh basil leaves
  • 2 x 150g burrata

Instructions

  1. Place the rose harissa, balsamic vinegar, olive oil, honey and garlic in a bowl. Season with salt and pepper, to taste, and whisk until well-combined.
  2. Slice the tomatoes and plate them up topped with basil. Tear over the burrata and finish it all off with that lovely harissa dressing. Serve with crusty bread and enjoy!
