These Thai Curry Chicken Meatballs are everything I want from a weeknight dinner. Tender chicken meatballs are gently simmered in a rich coconut curry sauce flavoured with Thai red curry paste, ginger and coconut milk. It’s comforting enough for a cosy evening at home, but equally impressive served to friends with coriander lime rice and plenty of steamed greens.

What Makes These Thai Curry Chicken Meatballs So Tender

Chicken mince is naturally very lean, which means it’s all too easy to end up with dry, rubbery meatballs. These Thai Curry Chicken Meatballs couldn’t be further from that. A handful of simple techniques work together to keep them wonderfully soft, juicy and tender every single time.

  • Panko breadcrumbs add moisture as well as structure. Mixing them with coconut milk before adding the chicken allows them to hydrate, helping the meatballs stay soft and juicy as they cook.
  • Egg binds everything together. It helps the meatballs hold their shape without needing to overwork the mixture.
  • Don’t overmix the chicken. Once the mince goes in, use your hands to combine everything just until evenly mixed. Overworking the mixture develops the proteins in the meat, resulting in firmer, denser meatballs.
  • Chill before cooking. Just 15 to 30 minutes in the fridge helps the meatballs firm up, making them easier to handle and less likely to lose their shape in the pan.
  • Brown first, simmer second. Giving the meatballs a quick sear builds flavour through caramelisation before they finish cooking gently in the sauce, where they stay beautifully tender.

Why Good-Quality Thai Curry Paste Matters

Thai red curry paste is the backbone of this Thai Curry Chicken Meatballs recipe, so it’s worth buying a good one.

The best pastes are made with fresh aromatics like Thai chillies, lemongrass, galangal, kaffir lime and shrimp paste, creating a depth of flavour that’s difficult to achieve from scratch without a long list of ingredients.

I almost always reach for Mae Ploy or Thai Taste. Both are packed with proper aromatics rather than relying on unnecessary fillers, and because this recipe uses relatively few ingredients, the quality of the curry paste really shines through.

Cheaper curry pastes often rely more heavily on water, starches or preservatives to bulk them out. They’ll still work, but they tend to produce a flatter, less fragrant sauce. Spending a little more on a good-quality paste is one of the easiest ways to make your Thai Curry Chicken Meatballs taste restaurant-worthy.

Why Good-Quality Coconut Milk Makes Better Thai Curry Chicken Meatballs

Coconut milk is much more than just the liquid in this Thai curry coconut sauce—it’s one of the main ingredients, so choosing a good-quality one really matters.

I always recommend using coconut milk with at least 70% coconut extract, which you’ll usually find listed on the tin. My go-to brand is Aroy-D, which has a beautifully rich coconut flavour and reduces into an incredibly silky sauce.

As the curry simmers, the water gradually evaporates while the coconut fats and solids naturally concentrate, creating a rich, silky sauce without the need for cream or any other thickening agents.

Lower-quality coconut milk tends to contain more water and fewer coconut solids, so the sauce never develops quite the same richness or body. When coconut milk is doing most of the heavy lifting, as it is in these Thai Curry Chicken Meatballs, it’s well worth choosing a brand that lets it shine.

Making Thai Curry Chicken Meatballs Ahead of Time

These Thai Curry Chicken Meatballs are ideal for meal prep and easy to prepare in advance. Here’s what I recommend:

  • If you’re cooking tomorrow: Roll the raw meatballs up to 24 hours ahead, cover and refrigerate until you’re ready to cook. You can also make the curry sauce a day in advance, then gently reheat it before adding the freshly cooked meatballs.
  • If you’re freezing for later: Cook the meatballs and finish the dish as written, then allow everything to cool completely before freezing the meatballs in the sauce for up to 3 months. Defrost overnight in the fridge before reheating gently on the hob until piping hot.
  • If you’ve got leftovers: Store them in an airtight container in the fridge for up to 3 days. The flavours continue to develop overnight, making them every bit as delicious the next day.

What to Serve with Thai Curry Chicken Meatballs

These Thai Curry Chicken Meatballs are all about the sauce, so you’ll want something to soak up every last drop. Some of my favourite pairings are:

  • Coriander lime rice, where freshly cooked jasmine rice is tossed with finely chopped coriander and plenty of lime zest.
  • Steamed jasmine rice, if you prefer to keep things simple.
  • Steamed greens, such as broccoli, Tenderstem broccoli or green beans, for freshness and balance.
  • A crisp cucumber salad, such as my Spicy Smashed Cucumber Salad, to contrast the richness of the coconut curry sauce.

Frequently Asked Questions

Can I bake these Thai Curry Chicken Meatballs instead of frying them?
Yes. Bake them at 200°C/180°C fan for around 15 to 20 minutes, or until just cooked through, before adding them to the curry sauce. That said, I prefer shallow-frying them first, as the caramelisation adds another layer of flavour.

Can I use turkey mince instead of chicken?
Absolutely. Turkey mince works very well, though it’s often even leaner than chicken, so take extra care not to overwork the mixture.

Can I make these Thai Curry Chicken Meatballs less spicy?
Yes. The heat comes almost entirely from the Thai red curry paste, so simply choose a milder brand or reduce the quantity slightly. The coconut milk helps mellow the spice, making the finished curry gently warming rather than overly hot.

Can I freeze Thai Curry Chicken Meatballs?
Yes. Once cooked, allow the meatballs and sauce to cool completely before freezing in an airtight container for up to 3 months. Defrost overnight in the fridge and reheat gently until piping hot.

Ingredients

For the meatballs: 

  • 50g panko breadcrumbs
  • 2 tbsp good-quality coconut milk (70% or more coconut extract)
  • 1 large egg, beaten
  • 1 tbsp good-quality Thai red curry paste (see Notes below)
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • ½ tsp salt
  • 500g chicken mince
  • 2 echalion/banana shallots (or 1 onion), very finely chopped
  • vegetable oil (or any neutral oil), for shallow frying

For the sauce:

  • 1 heaped tbsp good-quality Thai red curry paste
  • 1 tsp ginger paste
  • 2 x 400ml tins good-quality coconut milk (minus the 2 tbsp used for the meatballs)
  • 1 tbsp fish sauce
  • 1 tsp palm sugar or light brown sugar
  • 1 tsp ground turmeric

Instructions

  1. In a large bowl, mix the panko, coconut milk, egg, Thai red curry paste, ginger, garlic and salt until a thick paste forms.
  2. Add the chicken mince and shallots, then use your hands to combine thoroughly (try not to overwork the mixture as this will result in dense meatballs). Roll the mixture into 20 balls and refrigerate for 15 to 30 minutes to firm up slightly.
  3. Heat a tablespoon or two of vegetable oil in a large sauté pan over medium-high heat. Sear the meatballs until golden on the top and bottom, around 1 minute per side, then transfer to a plate.
  4. Lower the heat to medium. Add the Thai red curry paste and ginger paste and stir-fry for 30 seconds to 1 minute, or until fragrant.
  5. Add the coconut milk, fish sauce, sugar and turmeric, stir to combine and bring to a gentle simmer. Cover, reduce the heat to low and simmer for 5 minutes.
  6. Add the meatballs to the sauce, turn the heat up to medium and bring back to a simmer. Cover again, reduce the heat to low and cook for 15 minutes, or until the meatballs are tender and cooked through.
  7. I like to serve these with coriander lime rice (cooked white jasmine rice tossed with finely chopped fresh coriander and lime zest) and steamed greens on the side.

Notes

Good-quality Thai curry pastes are made with fresh, natural ingredients like Thai chillies, lemongrass, galangal, lime leaves and shrimp paste. Where possible, opt for brands that use a high percentage of these ingredients and steer clear of those bulked out with additives or preservatives. I highly recommend Mae Ploy and Thai Taste.
