Ingredient Breakdown

  • Extra-virgin olive oil: Adds richness and depth of flavour while helping to sauté the vegetables.
  • Sweet onion: Offers a mild, natural sweetness to balance the acidity of the tomatoes.
  • Garlic: Infuses the sauce with a warm, aromatic undertone.
  • Tinned tomatoes: The foundation of the sauce, providing a rich, umami base.
  • Water: Helps to thin the sauce to the perfect consistency.
  • Sugar (optional): Adds sweetness, balancing the acidity of the tomatoes.
  • Fresh basil: Adds a fragrant, peppery note that defines the flavour profile of the sauce.

The Importance of Using Quality Tomatoes

The secret to achieving the best Tomato and Basil Sauce starts with the quality of the tomatoes. Using fresh, ripe tomatoes is ideal. However if you’re cooking with tinned tomatoes (which are often preferred for their consistent flavour), the quality still makes a significant difference.

Tinned tomatoes, particularly those from trusted brands like Mutti or San Marzano, are picked and canned at their peak ripeness. This ensures that the sauce has a natural sweetness and deep, rich flavour. These tomatoes are also cooked and processed in a way that retains most of their natural sugars and acidity. This will give your sauce a well-balanced taste. When choosing tinned tomatoes, look for whole or crushed tomatoes. They tend to have a more authentic, full-bodied flavour compared to pureed varieties. The natural sugars in the tomatoes, combined with the slow cooking process, create a harmonious sauce that’s both savoury and slightly sweet. It forms the perfect base for the basil and garlic to shine.

How Long Should You Simmer Your Sauce?

Simmering your Tomato and Basil Sauce is an essential step in developing its flavour. The long, slow simmer allows the flavours to meld together, transforming the simple ingredients into a rich, complex sauce. Ideally, you want to simmer the sauce for about an hour. However the exact time can vary depending on your preference. A shorter cooking time might leave the sauce a little more acidic and lighter in flavour. Meanwhile a longer simmer will allow the tomatoes to break down completely and the sauce to thicken

The key is to let the sauce cook gently, over low heat, to avoid burning and to allow the natural sweetness of the tomatoes to emerge. Stir the sauce occasionally and keep an eye on the consistency. If it becomes too thick, you can always add a little extra water to reach your desired texture. Patience is key to achieving the perfect balance of flavours in this sauce, and the slow simmer is what transforms it into something truly exceptional.

The Role of Fresh Basil

When it comes to Tomato and Basil Sauce, fresh basil is more than just a garnish. It’s a key player in defining the sauce’s flavour profile. Basil is an aromatic herb known for its sweet, slightly peppery taste with subtle hints of mint, anise, and clove. The basil’s freshness adds brightness to the rich, umami-packed base created by the tomatoes. While dried basil can provide some flavour, nothing compares to the vibrant, aromatic quality of fresh basil leaves. They bring a lively contrast to the deep tomato sauce.

Adding half of the basil early in the cooking process allows its oils to infuse the sauce. Then adding the remaining fresh basil just before serving preserves its vibrant green colour and refreshing taste. Tearing the leaves instead of chopping them helps release the essential oils more effectively. This ensures that the basil’s fragrance permeates every bite. The combination of slow-simmered tomatoes and fresh basil creates an authentic Italian sauce that captures the essence of summer in every spoonful.

Tomato and Basil Sauce isn’t just limited to pasta. It’s versatility makes it a perfect companion for many dishes across different cuisines. Simple but delicious.

This sauce is an Italian classic, made using sweet onions, garlic, basil, and good-quality tinned tomatoes. Though it doesn’t contain many ingredients, it’s full of flavour. The best thing about this sauce is that it’s incredibly versatile. Once you’ve mastered the basics, you can make lots of different variations. You can add grilled veggies, chicken, meatballs, or even seafood – the possibilities are endless!

  • Prep Time: 10 minutes
  • Total Time: 1 hour 30 minutes
  • Yield: 6 1x
  • Category: Vegan, Vegetarian

Ingredients

Scale
  • extra-virgin olive oil
  • 1 sweet onion, finely chopped
  • 3 garlic cloves, minced
  • 2 x 400g tins good-quality whole or crushed tomatoes (I use Mutti)
  • 400 ml water
  • 1 tsp sugar, optional
  • 20 g fresh basil leaves, divided

Instructions

  1. Heat a splash of extra-virgin olive oil in a saucepan over medium heat. Add the onion and season with sea salt and freshly-ground black pepper. Cook, stirring frequently, until softened, 5 to 7 minutes.
  2. Add the garlic and cook, stirring constantly, for 1 minute, then add the tinned tomatoes, water, sugar (if using) and half of the basil – I leave the leaves whole, but feel free to roughly tear them. Season with sea salt and freshly-ground black pepper and stir to combine.
  3. Bring the sauce to a simmer. Cover, reduce the heat to low and simmer gently for 1 hour, stirring occasionally.
  4. Remove the sauce from the heat. Tear in the remaining basil leaves and stir to combine. Taste and adjust seasoning, then serve with your favourite pasta.
