Ingredients

Scale
  • 3 ripe peaches  
  • 4 tbsp maple syrup 
  • 1 tbsp light or dark brown sugar 
  • 1 tbsp extra-virgin olive oil or melted butter
  • ¼½ tsp ground cinnamon, to taste  

Instructions

  1. Heat your oven to 180℃ / fan 160℃. Halve and stone your peaches. 
  2. In a small bowl, whisk the maple syrup, sugar, extra-virgin olive oil and ground cinnamon with a small pinch of salt. 
  3. Arrange the peaches in a single layer flesh-side-up in a small skillet or roasting tin. Make sure they’re nice and snug without too much space around them, so that the juices don’t end up over-reducing or possibly even burning. 
  4. Pour the maple cinnamon mix over the peaches, ensuring they’re fully coated. Bake, flipping once halfway through, for 35 to 40 minutes, or until tender in the middle. 
  5. Let the peaches cool to room temperature in the roasting juices, then serve with vanilla ice cream, drizzled with the roasting juices.

  1. Zena, I’ve finally found you!!!! I saw you on the streaming channel TASTEMADE from the Jamie Oliver’s Great Cookbook Challenge. YOU WERE MY FAVORITE and I thought your idea for a cookbook was the most accessible. We all need to be able to use the ingredients we use for ONE DISH in multiple ways and your ideas, especially for Green Curry (though I like the version with coconut milk and broth and not just broth, just MO). I especially always ask for extra sauce so I can use it the next day doused on my Jasmine Rice, soooo yummy!! I just saved your profile to my Pinterest list were I follow hundreds and save thousands of recipes and where there is access to thousands upon thousands of recipes. I also don’t do Instagram or TIkTok, Insta is sooo confusing all I can do is scroll through pictures and just can’t figure it out, I’m 57 and not a computer person and TikTok is such a hot button here in the USA and I’ve already had my identity stolen TWICE so I limit my social media. Someone took over my FB page and my Uncle’s so I shut that down to, it’s a sad state of affairs what the internet has become. It was supposedly our saving grace and now can be our worst nightmare. But I love YouTube and hope that you consider doing a page because I’ll be there to subscribe and share!!!! Just the way about you was so accessible and friendly that I wanted to find you and your recipes!!! Please don’t give up on a cookbook because those of us “across the pond” really appreciate a book that is more than one recipe at a time. Getting out on YT, even with Shorts can really get you out there and hit tons of people really fast. These of course are just my thoughts that are coming from a place of love and light!!!
