If you’re a fan of avocado toast, you’ll love this one! This pimped up version is made with crispy olive oil fried sourdough topped with a pea and avocado ‘pesto’. It’s simple and quick, yet tasty and satisfying. And nutritious too!

Ingredients

  • 200 g frozen peas or petit pois
  • 1 large avocado
  • 1 lemon, zest and juice
  • 1 large garlic clove, crushed
  • 5 g fresh basil leaves, roughly chopped
  • 5 g fresh mint leaves, roughly chopped
  • 4 large, thick slices of sourdough
  • extra-virgin olive oil
  • sprinkle of chilli flakes, optional

Instructions

  1. Place the frozen peas in a heatproof bowl. Cover with boiling water and let sit for 5 minutes then drain.
  2. Transfer the drained peas to a food processor and add the avocado, lemon juice and zest, fresh basil and fresh mint. Season generously with sea salt and freshly-ground black pepper and blitz to combine. I like mine on the chunkier side, but you can make it as smooth as you’d like. If you don’t have a food processor, you can mash the ingredients by hand. Set aside.
  3. Arrange the sourdough slices in a single layer in a large frying pan and drizzle generously with extra-virgin olive oil. Heat the pan over medium-high heat and fry the bread, flipping occasionally, until golden brown on both sides.
  4. To assemble, top the toasted sourdough slices with the pea-sto avocado, sprinkle with chilli flakes and serve immediately – enjoy!
