Refreshing, thirst-quenching and absolutely delicious! This raspberry mint cooler is the perfect drink for a hot summer’s day. It comes together in minutes and is fully-customisable: add sugar (or your sweetener of choice) to make it sweeter, lemon juice (or water) to make it tarter or substitute the water for juice and either half or omit the sugar entirely.

Ingredients

Scale
  • 350 g frozen raspberries
  • 3 sprigs fresh mint, leaves only, stems discarded
  • 1 lemon, juice
  • 75 g sugar (or 50 g if you don’t want it too sweet)
  • 300 ml water

Instructions

  • Add all the ingredients to a blender and blend until smooth. If it’s too thick for your liking, add some more water and blend until smooth.
