This summery lemonade is the perfect drink for a hot summer’s day. The key to making the best lemonade is rubbing the lemon zest into the sugar. It draws out the lemons’ essential oils, which makes your lemonade extra lemony and delicious.

Ingredients
- 175g white granulated or caster sugar
- 5 lemons
- 200ml freshly-squeezed lemon juice (you might need more lemons depending on how juicy yours are)
- 400g strawberries, hulled and quartered
- 2 litres still or soda water (or more or less, to taste)
- lots of ice, to serve
Instructions
- Place the sugar in a medium mixing bowl, then zest the lemons into the sugar.
- Using your fingers, rub the lemon zest into the sugar until nice and fragrant, around 15 seconds. This will release the lemons’ essential oils, making your lemonade extra lemony and delicious.
- Transfer the lemon sugar to a blender and add the freshly-squeezed lemon juice and strawberries. Blitz until completely smooth. This is your base.
- You can strain the base through a fine mesh sieve to remove the strawberry seeds but I don’t think it’s necessary.
- Fill the bottom of a 3 litre pitcher with lots of ice. Pour in the base, add the water and mix to combine. Note: the recipe calls for 2 litres water, but I recommend starting at 1 ½ and tasting and increasing to your taste. I used somewhere between 2 and 2 ½ litres.
